Obituary
Eileen (Knoll) Paul, age 88, of Mandan, passed away on Dec. 7, 2021 in Phoenix, AZ under the care of hospice.

Eileen was born Dec. 1, 1933 to George and Rose (Bullinger) Knoll. Eileen was raised at St. Anthony, ND and educated in Mandan. Eileen married the love of her life, Peter Paul, on Oct. 7,1952 at St. Anthony Catholic Church. They were married 50 years and raised one son, Ronald. Peter and Eileen owned and operated a grocery store, Paul’s Food Center, in St. Anthony. After doing that for a few years, they purchased the Paul Family Farm, northwest of St. Anthony. They lived and farmed there until 2002 when Peter was killed in an automobile accident. Eileen then moved to Mandan where she lived until August 2018. Her symptoms from Alzheimer’s disease made it difficult for her to live alone and she moved to Arizona to be closer to her family.
Eileen loved being a farm wife and she was always by her husband’s side. She loved gardening and would can many vegetables from her garden. She loved to bake and cook and was very good at both. She enjoyed playing bingo and going to the casino. She also just enjoyed visiting with people, even if she didn’t know them. Eileen was a member of the St. Anthony Christian Mothers for many years.
Eileen will be truly missed by her son, Ronald (Cindy) of Phoenix, AZ; one grandson, Jason (Jamie) of Phoenix, AZ; and two great grandsons, Braydon and Bryson (the light of her life during her last years) She also leaves behind one brother, Bob (Marge) Knoll, Hacienda Heights, CA; and two sisters, Anella Leingang and Aldean Paul, both of Mandan; & one sister-in-law, Rosemary Paul, Cody, WY.
Eileen was preceded in death by her parents, her husband Peter, brother Ray (Eleanor) Knoll, two brothers-in-law Ray Leingang & Mike Paul, and infant brother Henry Michael Knoll.
